Fresh means fresh at Talon de Gato Farm.  We harvest the day before market.  We never bring unsold produce to another market.  All unsold produce is either donated to local foodbanks, fed to the chickens or we eat it ourselves.


Our signature crops are tapas peppers (Padron & Shishito), Espelette peppers, rhubarb, alliums (shallots, leeks, garlic, onions), wild asparagus, arugula, spinach, broccoli rabe and butternut squash. Our produce is grown using environmentally sound and sustainable agricultural practices.  TdG Farm is now solar-powered by a 20-panel photovoltaic system by Positive Energy of Taos.
